I'm not familiar with the series, mostly cus i just only played fate stay night. But I think I remember that they shouldn't be able to remember their past lives right? Or am I wrong?

Well, supposedly every Servant keep a record of what they do every time they're summoned in the Throne, and they can access those records before their new summon if so they choose. Some Servants like Serenity choose to start clean every time, so that their earlier lives won't influence them. Others like Arash, Avicebron and especially Elizabeth, keep memories of everything they do. Archer is one of those who like to keep as much as possible, as saw in Extra. So is Saber.

So yeah, the UBW timeline where Shirou chose Rin over Saber was a thing, and Saber has both those memories and the memories where she was chosen in the Fate route. It's complicated.

Overall, pretty much all the rules you know from F/SN are meaningless in FGO. The scale is completely different.

From what I understand Saber made a pact to fight in the grail wars before she died so she never actually ascended to the throne of heros. When she is summoned, she is really only being moved around in time, not a copy loaded from the throne of heros. This is why she can't take spirit form, because she is actually alive and physical.
Archer is a counter guardian, I'm not sure on all the specifics, but he is not a proper servant.

FGO's whole...thing is really complex thanks to the timeline shenanigans going on here, but the implications here are that Saber and Archer are reminded of their masters from the Fuyuki Singularity, you know, the singularity where everything is up in flames and only the Servants from the war are active, and all but Caster are tainted by a Grail that should not have existed.

It could be that Saber's carrying some guilt because maybe she was the reason that everything went up in flames and got Shirou killed, since her Alter form was the kingpin of the Singularity.
