I understand the frustration, but most artists when given colour pages want to flash forward to the sex so they get the juicy pages in colour, even when it would be better plotwise not to do so

Yeah I think there is way too many gender bender stories where the transformation is instant. You would think the process would more often be slower rather than faster/instant. What is worse is when it happens for no reason and the story doesn't explain how or why it happen. I can think of at least 100 ways for it to happen. Maybe some day I will make my own short doujinshi, but I will do things the right way and have the character actually transform and not go "POOF!" (He is a girl now.)
