I'm gonna hazard a guess it's because they have absolutely nothing else to work with. With regular porn, you grab yourself a subject, get a decent camera, lighting, whatever props and setting you need, maybe even a script and a video editor if you're ambitious enough... Throw those elements together, and you've got yourself a good piece of erotica to enjoy. But if you have fantasies of a busty mare or an asstastic husky... how do you fulfill those fantasies? You have no choice but to invest as much time and effort into honing your artistic abilities to bring these creatures to life. You take life-drawing classes, you learn human and animal anatomy and figure out how best to combine the two, you experiment with color to determine how light affects THIS kind of fur, or THAT kind of skin, you extrapolate as to what kind of world this character might live in so their existence seems all the more feasible. Furry artists are so good at drawing porn because their limited resources PUSH them into being so.
